Mmmmm, who doesn't love a ton of whipped cream on their desserts??
Ever heard of a Banoffee Pie? To be honest, before last week, I've never even heard of this! The only reason why I made this was because my sister came home asking me to make one, and I thought why not try it out and I was surprised at how easy this pie was to make! It's quick and easy to whip up last minute, or for a simple Easter Day dessert!
Banoffee pie is an English dessert created by Nigel Mackenzie that basically consists of a buttery base (some people use graham crackers or a shortbread base), toffee, sliced bananas, and a ton of whipped cream!
For my own twist, I decided to go for a crumbly no bake oreo base and dulce de leche, with thick slices of bananas and lots of chantilly cream.
Banoffee Pie
Yields: One 9" Pie
No Bake Oreo Base
750g Oreo Crumbs
90g Melted Butter
Dulce De Leche (The simple condensed milk method)
1 Can of Sweetened Condensed Milk
Chantilly Cream
400g Whipping Cream
53g Sugar
2g Vanilla Extract
Toppings
Sliced Bananas

Steps
Dulce De Leche (The simple condensed milk method)
1. Heat the oven to 425F. Empty out the can of sweetened condensed milk into a deep pan and cover tightly with foil. Place the covered deep pan into a roasting pan, or another deeper/bigger pan, and add hot water to reach halfway up the covered pan.
2. Bake in middle of oven for 45 minutes.
3. Add in more water if necessary, and bake for another 45 minutes (or until it's brown and thick).
4. Remove from water bath and let cool uncovered.
No Bake Oreo Base
1. Place the oreo crumbs into a bowl and mix with melted butter until well combined.
2. Press the crumb mixture into a 9 inch pie pan and tightly up the sides. Place pie pan into the fridge to let harden.
Chantilly Cream
1. Pour whipping cream into a bowl. Add in sugar and vanilla extract. Whip until soft-medium peaks.
Assemble
1. Pour dulce de leche into the oreo crust pie pan. Slice bananas into thick pieces and place on top of the dulce de leche. Spread chantilly cream over the top of the pie.
Since it's almost Easter, I added some colourful chocolate mini eggs for a cute topping.
